TWIKIE, DECONSTRUCTED: My Journey to Discover How the Ingredients Found in Processed Food are Grown, Mined (Yes, Mined), and Manipulated into What America Eats (Hudson Street Press, 2007 (NA))
Like most Americans, Steve Ettlinger eats processed foods. And, like most consumers, he often reads the ingredients label —without a clue as to what most of it means. So, when his young daughter asked, "Daddy, what's polysorbate 60?" while eating ice cream at the beach on a hot summer day, he was at a loss—and determined to find out.
Ettlinger has been an author, editor, and book producer since 1985, and has helped create over forty books. Just a dozen of those titles account for over a million copies. Six books relate directly to food. He has written or edited books on ethnic cuisines, beer, and kitchenware, has contributed to web sites, and helped create the bestselling series, Wine for Dummies. Ettlinger is an occasional contributor to The Huffington Post and has written Op-Ed pieces for the Los Angeles Times and the New York Sun, among others. He is a member of the International Association of Culinary Professionals (IACP) and a former president of the American Book Producers Association (ABPA). In the course of publicizing his work, he has appeared on all the major morning network TV shows as well as many other national and regional shows. He lives in New York City with his wife and their two children.
